“Shojin” refers to the traditional Buddhist vegetarian cuisine of Japan, so if you want to preserve the cultural nuance, “Shojin-style Curry” works nicely. If clarity for international readers is more important, “Buddhist Vegetarian Curry” is the clearest.
The SAIZA (lunch) at Ryoudenji Temple is based on the concept of “Chisoku Anbun”. Chisoku Anbun means to know that one has enough and to know that one’s present state is peaceful. If we consider our current state as the standard, anxiety about envy, inferiority, loss, or gain fades away. That state is comfortable.
